THE INGREDIENTS
- Ribeye Steak: To choose a good rib eye steak, take a good look at the marbling (or fat content) in the steak. The higher the level of the marbling, the better the texture.
- Kosher Salt: this kind of salt is the best choice for making steaks because its coarse crystals are best absorbed by the outer layer of the steak.
- Black pepper: use freshly cracked instead of pre-ground pepper. This makes a huge difference in the taste.
- All purpose seasoning / Montreal steak seasoning: you can buy Montreal steak seasoning from the grocery store or make it at home. This seasoning includes black peppercorns, garlic powder, kosher salt, paprika, onion powder, ground coriander, dill weed or seed, red pepper flakes.
- Olive oil: aside from the flavor it brings, olive oil has a high smoke point, which is a requirement in cooking steak. It’s also a better choice than other oils because at high temperatures, it doesn't break down into harmful compounds.
- Fresh Rosemary Sprigs: the best rosemary to use is the fresh one, but in the absence of a fresh sprig, you can also use dried.
- Thyme: fresh or dried, this earthy herb gives a steak dish depth of flavor.
- Butter: Butter gives a steak dish extra richness. Use it softened so that it will be easier to add the garlic and the cilantro.
- Garlic: Garlic and butter is one of the best pairings. Use minced garlic to make sure that it will be well incorporated in the butter mixture.
- Fresh cilantro: this brings tangy, citrusy flavor to the dish. It also brings warmth and balance to the dish.
- Worcestershire Sauce: to bring a deeper harmony of flavor, worcestershire sauce’s tangy, very earthy and sweet notes greatly levels up the garlic butter.

STEP BY STEP DIRECTIONS
For the meat
- Remove steak from fridge and let it come to room temperature (about 20 mins). Don’t skip this step! Otherwise, you won’t achieve the perfect texture.
- Add a coating of olive oil onto the steak. You can also opt to use canola oil spray as it works really well too. Remember that steak is seared better using high heat oil.
- Season each side of the steak generously with kosher salt, freshly cracked black pepper and Montreal or all-purpose seasoning. Make sure it’s even on both sides.
- Turn on the Ninja Foodi Grill and set it to Grill Function - HIGH. Let it pre-heat so it gets to 500 degrees Fahrenheit. This will give you a nicely seared crust.
- When it's hot and ready, pop in the meat and put the sprigs of thyme and fresh rosemary on top.
- Start grilling meat on one side for 4 minutes and then turn it over and grill for another 4 minutes or until it reaches a temperature of 135 degrees fahrenheit.
For the sauce
- Place the softened butter in a bowl.
- Mix in minced garlic, cilantro, Worcestershire Sauce and salt
- Before serving, add cilantro garlic butter on top of the steak once it's done!
